AUNT LUELLA'S PUMPKIN PIE

2 EGGS- BEAT

1 CAN (16 0Z) SOLID PACK PUMPKIN

3/4 C. SUGAR

1/2 tsp. SALT

1 tsp. CINNAMON

1 C. MIK

1 9 INCH UNBAKED PIE SHELL

1 tsp. VANILLA

 

MIX INGREDIENTS IN ORDER GIVEN.  POUR INTO PIE SHELL.  BAKE IN PRE-HEATED OVEN 425 DEGREES FOR 15 MINUTES.  REDUCE TEMPERATURE TO 350 DEGREES AND CONTINUE BAKING FOR 45 MINUTES. 

COOL AND GARNISH WITH WHIPPED CREAM

LOLA'S FRUIT COBBLER

4 C. FRUIT- YOUR CHOICE (RHUBARB, APPLES, PEACHES, BLUEBERRIES, CHERRIES)

1 tsp. CINNAMON

1 C. FLOUR

3/4 C. OATS

1/4 tsp. GROUND CLOVES

1/2 C. BUTTER

1 C. BROWN SUGAR

1 C. SUGAR

2 TBSP. CORNSTARCH

1 C. WATER

1 tsp. VANILLA

 

COMBINE FLOUR, OATS, CINNAMON, CLOVES, BUTTER AND BROWN SUGAR TOGETHER UNTIL CRUMBLY.  PAT HALF OF THE MIXTURE IN A 9 INCH SQUARE PAN THAT HAS BEEN BUTTERED.  SPREAD FRUIT OVER THE TOP OF CRUMBLY MIXTURE.

 

IN A SAUCEPAN, COMBINE:

WHITE SUGAR, CORNSTARCH, WATER, AND VANILLA.  MIX AND STIR CONTINUALLY OVER MEDIUM HEAT UNTIL CLEAR AND THICK.  POUR OVEDR FRUIT.  SPREAD THE REST OF THE CRUMBLY MIXTURE ON TOP OF THE FRUIT.

BAKE AT 350 DEGREES FOR 50-60 MINUTES.  SERVE WITH A SCOOP OF VANILLA ICE CREAM

2 TBLS. FRESH MINT

2 TBLS. SUGAR

 

PEEL AND SLICE ORANGES

CORE PEARS AND CUT INTO THIN WEDGES

 

ARRANGE THE FURIT ON 4 DESSERT PLATES.  MINCE FRESH MINT LEAVES UNTIL VERY FINE AND MIX WITH SUGAR.  SPRINKLE OVER THE FRUIT AND SERVE.
